I have been in the hospitality industry for 34 years; completing 4 years of in-service training and qualified with a diploma through the Southern Suns In-house training program at the Sandton Sun 5 Star Hotel in Johannesburg, South Africa. I have worked extensively in hotels, restaurants, lodges and catering facilities in South Africa, Zambia, Namibia, Tanzania, Zanzibar and Kenya giving me a clear understanding of African culture and I have been working and training Chef’s in the more intimate and luxury lodges as well as large hotels and country clubs.
