It has been the experience of a lifetime, never time to lean, always busy prepping or cleaning. Our serves were extraordinary, I had to help train new staff and ensure stock and mise en place was always in top notch state, some serves when it gets busy I would clock out and come back to the kitchen to ensure my team is ready to take over from me without being in too high stress. In room dining kitchen is well known to be the hardest kitchen at the Fairmont Hotel. I'm confident that I have all the leadership and food preparation skills necessary to fulfill the role.
